Making Dinner this Week

Yum, it’s been working out! Yesterday I made a chicken & rice casserole in the crockpot. My Mom had a great recipe for the oven but I knew I wouldn’t have time to make it, I had big plans that day… a nap! haha – It was good but I can tell that having lots of crockpot stuff will get old. It’s very tasty but crock-poty mushy and you just can’t have that TO often!! Bummer 🙂

Tonight I just grabbed some ravioli from the store in those precooked packages and heated up some marinara sauce with garlic bread. It was very very good and easy! I have salad in the fridge that I might snack on later too.

Jamie was asking if Sam ate all this stuff… Well, Sam is not that picky of an eater but she only eats a little bit. She has some failsafes that she always eats so I put a little of everything on her plate.

For instance on our chicken & rice night, I had cut up tomatoes and avocado that she loves and I added some cooked carrot, chicken bites, and rice to the plate. She adores rice. So she started off and ate all the tomato and half of the avocado. We then ‘fed’ her Little People who sit next to her plate at dinners and then attempted to shove a bit of rice (disguising some chicken in there) into her mouth. Then, she actually picked up two chicken pieces and ate them. Five minutes later after she had gotten out of her chair (we left our booster seat at Nicole’s last Saturday, LOL – no straps!) she still had the chicken in her mouth that she wanted to spit out as she couldn’t chew it up. At that point I fed her more rice, about 3 small forkfuls, and then another rice and carrot bite. So that was pretty good.

Tonight, I started her off with four raviolis and a slice of garlic bread. She helped me make them by standing on the chair next to me and was really excited to eat them, I was kind of surprised! Although when she ‘helps’ she is more invested and wants to eat it. The crockpot stuff she doesn’t help on. So she gulped down all the raviolis and bread and I proceeded to give her 5 more! Then she got off the chair to get more toys and we were finishing off all the food. I then found out later that SOMEONE had left 6 raviolis in his bowl, but put water in the bowl in the sink! WASTE! LOL – We are feeding her some ham or salami in about 3 minutes to make sure she eats enough.

Tomorrow I have chicken in the fridge. I’m thinking teriyaki something but maybe in the oven? I’d like to BBQ it but I’m not actually sure if we have propane in there and I refuse to BBQ, that is a man’s job. hahahah – Or Justin said something about his stir fry but I don’t know how to make that, maybe he wants to, I dunno.

I tried this recipe this week and it was good and easy. I made a honey mustard dipping sauce to go with it. I just mixed some dijon mustard, regular mustard, and some honey. Just taste it to see if it’s to your liking.

Oven-Baked “Fried” Chicken

Cooking spray
2/3 cup instant oats
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon mustard powder
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 (4-ounce) boneless skinless chicken breast halves
2 tablespoons Dijon mustard
2 cups frozen green peas, steamed or microwaved until hot

Preheat oven to 400 degrees F.

Coat a large baking sheet with cooking spray.

In a resealable plastic bag or shallow dish, combine oats, garlic powder, onion powder, mustard powder, paprika, oregano, thyme, salt, and pepper. Mix well and set aside.
Brush each chicken breast with Dijon mustard. Add chicken to oat mixture with tongs and turn to coat both sides. Transfer chicken to prepared baking sheet and spray with cooking spray.

Bake 30 minutes, until golden brown and cooked through. Serve with peas.

Kim, you must be a wizard in the kitchen! Anything that involves ‘oats’ in it has to be hard! haha! I will keep it in mind, thank you!
