Italian Chicken and Rice

Prep: 7 min Cook: 15 min Servings 6 to 8

1 1/2 lb skinless, boneless chicken breast halves, cut into strips

1 cup chopped onion

2 cups chicken broth

1 can (28oz) Del Monte Diced Tomatoes with Basil, Garlic, & Oregano

3 cups instant white rice

1 can (28oz) Del Monte French Style Green Beans, drained

1. Coat large skillet lightly with nonstick cooking spray. Heat over medium-high heat. Add chicken and onion. Cook and stir about 5 minutes or until chicken is no longer pink.

2. Carefully stir in broth adn undrained tomates. Bring to boil. Stir in rice and beans, reduce heat. Simmer, covered, 5 minutes.

3. Remove from heat. Cover and let stand 3 minutes

Hmm, this LOOKS really good on the green bean can so I wanted to write it down. It might be a tad complicated for me, at least I may have to do it 2 or 3 times before it actually comes out right. We shall see. Maybe I shall experiment. Justin doesn’t like tomates but Sam does… the rest should be yummy.
