Chicken with Stuffing

Prep: 5 min Cook: 4 hours

4 (4 oz) boneless, skinless chicken breast halves
1 (10.75oz) can condensed cream of chicken soup
1 1/4 cups water
1/4 cup butter or margarine, melted
1 (6oz) package corn bread stuffing mix

Place chicken in a greased slow cooker. Top with soup. In a bowl, combine the water, butter and stuffing mix; spoon over the chicken. Cover and cook on low for 4 hours or until chicken juices run clear.

YUM! This was SO AWESOME! I used Chicken stuffing instead of cornbread and it tasted like a turkey dinner. (Or, you know.. chicken.) I also cut up a carrot for a veggie and stuck it in there. Some online people said they put frozen peas in there too, I might do that next time, I think Sam likes peas. So do I. Justin does not but he will live.

*** So, it was a little bit mushy the first time. After I gave the ingredients to Krysta, she told me how to make it better. 🙂 We both used two chickens, btw – not four. Put the chicken in at the bottom right next to each other. Put a FEW spoonfuls of soup over and around the chicken. Basically use half or less of the can of soup. Then mix up the stuffing (the first time I forgot to WARM the butter – it worked better this time!) and then spoon it on top of the chicken but make sure it piles ALL ON TOP of the chicken. Make a HUGE pile to the top of the cooker. That way the stuffing will not be so mushy.

This time I put carrots and broccoli around the chickens and put some of the soup around it too. Honestly, there was to much stuffing, J thinks we should make half the box next time. Wonder if you can do that? I guess just put the rest into a ziplock bag?

It was the best though. This is definitely a winner. I love the crockpot, it’s so easy!

The “Fix it and Forget It” Cookbook has the best crock pot recipes. Just thought I would share 🙂 I love that cookbook!

I love this one! My mother law used to make it all the time. I’ve only done it once or twice… but I think I will have to make it a lot more this year!
